Peppermint Patty’s
I have been making theses cookies for years. When the holidays come around it its time to start baking theses are the first thing everyone asks for. The rich dark chocolate coated with creamy white chocolate with a hint of peppermint will make even the coldest grench heart soften. Not to mention when there is so much to do around the holidays I love how easy these are.
Ingredients:
I cup flour
2/3 cup Cocoa Powder
1/4 teaspoon salt
1/2 cup softened butter
3/4 cup brown sugar
1 egg
2 teaspoons peppermint extract
1 1/2 cup white cohcolate melted
1/4 cup crushed candy cane
1/2 chocolate chunks
Pre heat the oven to 350
In a mixing bowl fitted with a paddle attachment add the butter and sugar and mix until light and fluffy. About 3 minutes.
Add in the egg and peppermint extract and continue to mix.
Add in the cocoa Powder and mix until full incorporated.
Once the cocoa powder is mixed add the flower and salt until dough forms.
Scrape down the side of the mixing bowl and add in chocolate chunks.
Wrap up the dough and and chill in the fridge for 30 minutes or longer.
When the dough is chilled use a portion scoop to place dough on a lined baking sheet.
Bake for 10-12 minuets and let cool.
In a glass bowl add white chocolate chips and and microwave for 30 second increments. Make sure to stir in-between. When the chocolate is almost melted I let it sit in the microwave for a few minuets and the heat of the glass bowl will help melt the rest of the chocolate. The burn point of chocolate is so high I like to air on the side of caution and go slow.
Now its time to dip those cookies into the white chocolate and and sprinkle them with some crushed candy cane!!
This is my favorite part. They are just so cute!
Now they are ready for Santa.
