Caramelized Onion and Cheese Phyllo Cups

This is a recipe I have been making with my mother for as long as I can remember. It was one of the first things I remember making when we catered together. It is just an easy few ingredients and makes the perfect little bite. Not to mention, it pairs perfectly with Champagne.

Ingredients:

2 Phyllo Cups (30 cups total)

1 1/2 cup Shredded Gruyere Cheese

1 large Onions diced small 1

1 tablespoon Olive Oil

8 oz softened Cream Cheese


Preheat oven to 400

In a frying pan, add the oil and let it warm over medium heat.

Add the diced onion and cook on low to caramelize them. This will take about 10 minutes.

Once cooked, place in a mixing bowl and top with the softened cream cheese.

With a spatula, mix the cream cheese and onion until combined.

Next, add the gruyere and mix until it's incorporated.

Place the phyllo cups onto a baking sheet and spoon the cheese mix into the cups.

Place in the oven and bake for 8-10 minutes. Until the tops start to brown.

Pull out and serve on your prettiest tray and watch your guest devour them.
