Pink Sprinkle Cookies

Sugar cookies are fun and all, but what if we add stripes and sprinkles???? I mean, how freaking cute! I'm also always down for something easier, and skipping the frosting is a total time saver.


Ingredients:

1 cup Butter softened

1 cup Granulated Sugar

1 Egg

2 teaspoon Vanilla Extract

1/2 teaspoon Almond Extract

2 teaspoon Baking Powder

2 1/2 cups Flour

Pink Sprinkles

Pink Food Coloring

Add butter to the bowl of a standing mixer with the paddle attachment. Whip butter until it changes in color, about three minutes.

Add sugar to the butter and mix for another two minutes. (the sugar must be all the way incorporated to get the right consistency of dough)

Add the egg, vanilla, and almond and continue to mix.

Add flour and baking powder in a separate bowl and whisk them together.

Slowly add the flour into the mixer and mix until incorporated.

Pull half the dough out of the mixer and wrap it in plastic, and chill for one hour.

Add 1-2 drops of pink gel food color to the remaining cookie dough and wrap in plastic, and place in the fridge.

Preheat the oven to 350.

Now that your dough is chilled set the tan dough out on a lightly floured surface to roll out.

Use a knife to cut the dough into strips.

Repeat with the pink cookie dough. Once it is rolled out, sprinkle the dough generously with the pink sprinkles and gently roll it once more to embed the sprinkles into the dough. Then cut the strips of dough.

Replace every other strip with dough from the other color.

Remove every other strip from the two colors and replace the opposite color.

Gently roll over the dough to help the strips stick together. At this point, you will let out a little squeal because it's so freaking cute!

Use heart-shaped cutters to cut out the cookies.

I bake my cookies on a baking sheet lined with a silpat. This will keep them from sticking. This next trick is crucial in helping my cookies hold their shape. I place the whole cookie sheet in the freezer for 5-10 minutes.

I don't like my sugar cookies too crisp but nice a doughy; take the cookies out once they start showing some color on the edges. I usually bake them for 8-15 minutes, depending on how thick and big they are.

When my cookies are done, I allow them to cool on the baking sheet before moving them to the cooling rack. Because I underbaked them, they do not need to be moved to the cooling rack immediately.

Now your sweet little heart cookies are ready to impress your valentine.
