Strawberry Syrup

When the summer months come, I feel like we always have an abundance of strawberries. I love to preserve them by turning them onto syrup. It is the perfect addition to drinks, over pancakes in the morning, or over ice cream on a warm summer night. It will last a month in a jar in the fridge or years in your freezer.


Ingredients:

1 cup Straeberries (fresh or frozen)

1 cup Sugar

1 cup Water

1 teaspoon Vanilla Bean Pastes

In a saucepan, add all ingredients and bring to a boil.

Stir continually until sugar dissolves.

Use a fork to smash the berries down once they have softened.

Once the sauce has thickened, remove from heat and let it cool.

Place syrup in a blender and blend until smooth.

Run the puree through a fine mesh to remove the berry seeds.

Pour into a jar and keep in the fridge for up to a month.

I love to have this on hand to add to drinks, serve over ice cream, or add to pancakes or waffles.
