The Perfect Scone
I have to say, I think the scone is one of the most underrated pastries. Something about a warn scone smothered in butter and jam is so comforting. Not to mention how versatile it is. It's the perfect base for so many yummy treats and something I think everyone needs to have in their repertoire. I love how easy these are to make and that I always have the ingredients on hand. Perfect for the procrastinator or unexpected company!
Ingredients:
2 cups Flour
2 cups Cake flour
3/4 cup Sugar
1/2 cup Cold Butter cut into small pieces
1/2 teaspoon Salt
1 cup Sour Cream
1 teaspoon Vanilla Extract or paste
2 tablespoons Baking Powder
1/2 cup Cream (extra for brushing over the top)
1/4 cup Half & half
Sanding Sugar for tops.
Butter and Jam for filling
Makes 8 scones
Pre heat the oven to 375
Line a baking sheet with parchment paper.
Cut the cold butter into small pieces and set aside
In a mixing bowl fitted with a paddle attachment, add the flours, sugar, butter, baking powder, and salt. Mix on low until crumbly.
The key to baking something flaky and fluffy is to not over-mix. So mix just until combined.
Add the sour cream and vanilla and mix on low.
In a pitcher, add the cream and half & half.
Slowly add the cream mixture to the flour mixture until dough is formed.
(I love scones with butter and jam on the inside, and it's so simple yet delicious. But this recipe is so great because at this point, you can add anything your little heart desires. Fresh blueberries and lemon zest, dried cranberries and chocolate chips, Maple flavoring and pecans….the options are endless.)
Remove dough from the bowl and add to a lightly floured surface.
Shape the dough onto a flat disk and cut it into eight pieces.
Place onto the baking sheet and lightly brush the cream on the top.
I like sprinkling sanding sugar on top, but it's totally optional.
Bake for 12-15 minutes until golden brown.
While still warm, cut in half vertically and add a big old pat of butter. Then smother the top of that with your favorite jam. If you are feeling extra sassy, you can dust with powder sugar.
