Berry Pie
I love feeling like I can do all the things, but the reality of the situation is that I’m only one person, and there are only so many hours in the day. Plus, your girl needs at least 8 hours of sleep to not become "mummy dearest". So I love making things that look way harder than they are, and I also love finding shortcuts along the way. These sweet little desserts can be made ahead of time and used on the table, and they bring a fun element to any tablescape.
Makes six pie cups
5 cups Frozen Berries
1 1/2 cup Sugar
3 tablespoons Flour
1 1/2 teaspoon Vanilla
Pillsbury Pie dough thawed (I know what you are thinking…there is a time and a place to make pie dough. I actually think Pillsbury is a great product and for this kind of a recipe, it's perfect)
Coarse sanding sugar for topping
Egg wash (a mix of 1 egg and a few tablespoons of cream whisked together)
Preheat oven to 400
In a mixing bowl, add frozen berries, sugar, flour, and vanilla.
Mix it until the berries are completely coated.
Spoon the berries into the baking cups and set them aside.
Roll out the pie dough and use a small heart-shaped cutter (you could also do the same with a star cutter for the 4th of July) to cut out shapes.
In a wreath pattern, place the hearts around the outside edge of the pot.
Use a pastry brush to brush the egg wash onto the pie dough.
Sprinkle the sanding sugar on top of the pie dough and place it in the oven.
Bake for 20 minutes until the berries are bubbling.
Let cool and serve with a scoop of Whip Cream or Vanilla Ice cream.
