Apple Pie Filling
As soon as the weather turns, like most basic B’s, I want all the fall feels. I love having things like apple pie filling on hade to add to oatmeal, pancakes, Ice cream, yogurt… you get the point. I mean, I suppose you could also add it to pie.
Ingredients:
3 Green Apples
1 tablespoon Fresh Lemon Juice
3/4 Sugar
1 teaspoon Vanilla
1 1/2 teaspoon Ground Cinnamon
1 tablespoon Flour (you can use cornstarch if it needs to be GF)
Peel and core the apples.
Cut the apples into medium size chunks. ( I have always preferred the chunk to a slice. I think its easier to eat, and I like the texture of the apple after it cooks down)
Sprinkle flour, sugar and cinnamon over the top of the apples and coat the apple.
Place apples into a saucepan over medium heat and continually stir.
Add lemon juice to the pan and continue to stir.
The apples should release juice as they cook. If they seem to stick, add a tablespoon or 2 of water.
Cook the apples down until they are tender (about 15 minutes).
Let cool and place into a jar. They will last in the fridge for 2 weeks.
