Steak Soup

Here is one of those family recipes my mother has been making me for years. Just the smell of this soup cooking instantly brings me comfort. I also love it because it’s so easy. When it comes to dinner, that’s what this tired AF mama is after. This tomato-based soup is full of all the veggies my kids love, so there is never any dinner-time drama…. No, that must be rephrased; no one will complain about dinner that night. I have a red-headed tweenager...there is always drama.

Steak Soup

Serves 6

1 onion diced small

2 Carrots diced small

3 stocks Celery diced small

(I know I keep saying this, but Treader Joe's sells mirepoix pre-cut in the produce section. I put mine in the freezer, so I always have it on hand when I need it. Save yourself some time ain't no one got time to chop all those veggies.)

1 lb ground Beef

1 tablespoon Olive Oil

1/3 cup Flour

1 cup Frozen Corn

1 cup Frozen Peas

1 bag 120z Green Bean cut into pieces

2 teaspoon Salt

1 1/2 teaspoon cracked Black Pepper

1 clove Garlic minced

2 teaspoons Worcestershire sauce

1 can Tomato Sauce

1 can Crushed Tomatoes

5 cups Beef Broth

In a stockpot, start by browning the beef over medium heat until it's fully cooked. Once browned, remove from your pot and drain the fat from your meat. I do this by laying a few paper towels on a plate and dumping my meat onto the paper towels to absorb the grease.

Next, add the olive oil to coat the pot, add the onions, garlic, carrots, and celery to the pot and cook down until they are translucent.

Add the cooked ground beef and the rest of the vegetables to the pot.

Add the flour and mix it in, so it's not clumpy. Then add the stock to stir it together. Make sure to scrape the bottom of the pot to get all the flour and beef remains incorporated.

Add the tomato sauce, crushed tomatoes, Worcestershire, salt, and pepper.

Bring it to a simmer for about 10 to 15 minutes to help bring out all the flavors, and then it's ready to serve.

I will serve this with a good loaf of crusty bread for dipping and a salad. Just like that, dinner is done, and I'm one step closer to bedtime!
