Cheesy Spaghetti
Every year on Halloween, my Grandma would make us canned spaghetti with cheddar cheese and black olives. We thought it was the most amazing thing. I don’t know what it was, but it was always such a warm and comforting dish and a great balance to all the sugar we had already consumed! Now, as an adult in the culinary world, I can’t seem to bring myself to buy canned spaghetti (I know total snob), but I really wanted to recreate this dish for my kids. I love the idea of having traditions set around holidays with different meals and them finding comfort in it. So I took everything I could remember and tried my best to make it again. It did not disappoint.
Ingredients:
1 box Spaghetti Noodles cooked (12oz uncooked)
1 lb Ground Beef cooked and drained
2 cans Tomato sauce
1/2 Heavy Cream
1 can Sliced Black Olives
12 oz Shredded Cheddar Cheese
1 teaspoon Salt
1 teaspoon Garlic powder
1 teaspoon Onion Powder
1/2 cup Chicken stock (I used my veggie broth powder.)
The best part about this dish is that it’s wham-bam-thank-you-ma’am kind of a thing. Which is always so nice on a night when there is already so much going on. This dish could also be put in a crock pot to help with the evening time crunch.
Place the pasta in a greased baking dish.
Layer the meat, olives, and 3/4 cheese on top of it.
Pour the sauce and spices over that and mix it all up.
Once it’s all mixed, pour the chicken stock, and cream over the top and cover with remaining cheese.
Cover with foil and bake at 350 for about 35minutes.
Remove foil and let the cheese bubble.
Serve to your spooky little monsters and plan out how you are going to attack their Halloween candy stash after they are sleeping! Personally, I think the dark chocolate milky ways pair best with my $4 Costco wine!!
