Pineapple Margarita
In honor of Cinco De Mayo, it felt fitting to share a margarita recipe, but not just any old recipe would do. As you know, “ never ever-ever-ever be basic for nobody honey” said the great Cardie B. So we are going to fancy them up a bit with some pineapple.
Ingredients:
Pineapple fresh
1.5 oz Tequila
1.5 oz Lime Juice
3 oz Pineapple juice
1 oz Curacao (triple sec)
Tajin for the rim
Slice lime
Run the slice of lime around the rim of the glass.
Pour a few tablespoons of the Tajin into a shallow bowl.
Dip the glass top side down into the Tajin to completely coat the rim of the glass.
Slice the pineapple into small chunks (reserve some for garnish).
Place a few slices of pineapple in the bottom of the glass.
Muddle the pineapple to break it up and release the juices.
Add ice to the glass.
In a shaker filled with ice, add pineapple juice, lime juice, Tequila, and Curacao.
Give it a good shakey-shakey and pour it into the glass.
Add a pineapple wedge and maybe an umbrella if you are feeling sassy.
