Honeys Easter Ham

So funny story, my sweet, very handsome, and loving husband (who edits everything I write, hey Boo) was brought up on Costco ham. The man loves his Costco ham, never mind that he married into a family of foodies who love to cook (and not to toot our own horn, but we are really good at it!!). Nevertheless, it’s what makes him happy, so being the good wife I am, I pull out the little dehydrated spice packet and make the glaze just the way the package says to.

When Edible magazine reached out and wanted my ham recipe, I knew I had to pull out all the stops and show my hubby what he’s been missing all these years. So what’s a girl to do… wrap that MF in bacon (the ham not my husband) ((that’s a totally different post)).


Ingredients:

1 bone in ham about 10 lb

15-20 strips Bacon un-cooked (you may need more or less depending on the size of ham you need.)

1 can crushed pineapple

2 cups pineapple juice (Save 1/2 a cup to make a slurry)

2 tablespoons corn starch

2/3 cup brown sugar

2 teaspoon fresh gingered minced

2 teaspoon cloves

1 teaspoon flaky kosher salt

In a saucepan, add 1 1/2 cup pineapple juice, brown sugar, ginger, and clove.

Bring to a simmer until sugar is dissolved.

Mix remaining pineapple juice with cornstarch.

Whisk unit cornstarch is fully incorporated.

Pour mix into a simmering pot and continue to whisk. The mix should thicken enough to coat the back of a spoon. You want a syrup consistency, if it’s too thick, add more juice a tablespoon at a time.

Once thickened, add drained pineapple to the syrup.

Set sauce aside.

Place ham flat side down in a roasting pan.

Start to place bacon over ham in a basket weave pattern.

Once the ham is completely covered in bacon, coat the ham with some of the pineapple syrup. Save the remaining syrup to baste ham while it cooks.

Cover Ham with tinfoil and place in 325-degree oven.

Bake for an hour and baste ham with syrup.

Place back in the oven and bake for another 30 minutes.

Remove foil and add the remaining syrup.

Sprinkle salt over the top of the ham.

Turn oven to 425 and cook until bacon is crispy; about 15 minutes.

The internal temp of the ham should be between 140 and 160 degrees.

Remove from the oven and place on a serving platter.

Serve the remaining pineapple sauce with ham. (I’m telling you this stuff is so good you are going to want to smother your ham in it)

Allow everyone to stare in awe of your masterpiece.
