Little Lemon Jell-O Shots

If you have followed me for long, you know that I love a good Jell-O shot. It adds a little fun to any gathering. Not to mention they are delish!! The one downside to a Jell-O shot is the ugly plastic cup (perfect for the frat house, not so much for a fancy dinner party). So I had to think outside of the box on how to class them up a bit. So in the words of Reba, “here’s your one chance Fancy don’t let me down”!!

Ingredients:

6 lemons

1 3oz box Lemon Jello

1 cup Water

1 cup Lemon flavored Vodka (I used pink lemonade for 1/2 of my shots.)

Start by cutting your lemons in 1/2. Using a spoon, scoop out the meat of the lemon and leaving the rind. Make sure to not cut through the lemon or the liquid Jello will leak out.

Once all the lemons are prepped, set them aside as flat as you can on a sheet pan.

Bring 1 cup Water to boil.

Pour the Jello powder mix into a mixing bowl.

Pour one cup of the boiling water in a bowl with the Jello mix and whisk until dissolved.

Next add one cup vodka to the Jello mix and whisk.

Use a small cup to pour the Jello into the lemons.

Place in the fridge to allow the Jello to set up. This takes 2-3 hours.

Once the Jello is set, cut the lemon half’s into half again to make wedges.

Add them to a cute tray and serve. I can guarantee they won’t last long and will be the absolute hit of the party. Now you and your friend can re-live your college glory days in a much more sophisticated fashion. WARNING: I can not promise you will not end up dancing on a table singing Lil Jon after consuming a few!
