Berry Pie Cups
This is one of my go to summer desserts. I alway have the ingredients on hand and they don’t take long to whip up. Not to mention who doese’t love their own personal size dessert. They are just the cutest little things. The great thing is that you can use any fruit you have on hand, by no means are you limited to berries. So when you need something last minuet this is the perfect go to, and sure to impress.
Ingredients for filling
3 cups Berries (whatever fruit you have on hand)
2/3 cup Sugar
2 tablespoon Corn Starch
1 teaspoon Vanilla
Ingredients for topping
1/2 cup Butter softened
1/2 cup Sugar
1 cup Flour
1 teaspoon Vanilla Bean Paste
Vanilla Ice Cream for serving
Pre heat oven to 350
Makes six small cups. I’m using glass yogurt jars I have saved, but any small jar or ramekin will work.
Start by prepping the fruit, washing and removing the stems of the betties.
Place fruit in a large bowl.
Add sugar, vanilla and cornstarch to the berries and mix with a spoon. Set aside while you prep the topping
To start the topping add softened butte, sugar, vanilla paste and flour.
I use my hand to mix but you could also use a dough blender also. You want the consistency to be crumb like, with some big and smaller pieces.
Next spoon the berries into the jars to about 3/4 full. Then top with the crumb topping. I pack the topping in and dome it a little on top. Who does not like crumb topping the more the merrier!!
Place jars on a baking sheet and place into the oven for about 15 minutes until they are bubbling.
Let cool and serve warm, topped with scoop of vanilla ice cream.
This is such a yummy summer treat and no one will know you did not spend all day in the kitchen baking. Now pour a glass of wine, put your feet up and enjoy the sunshine.
