Snow Cap
I'm one of those people who will be cold from the first leaf falling in the fall until the first bloom of spring. I will do anything to keep warm in the cold winter months. Naturally, this mama's favorite was to keep warm involves a little something-something in my cup. Funny enough, this recipe came to me one night when I was lying in bed trying to sleep. I love a good hot butter rum, so I played with the idea of making it a touch better; I wanted to make something that tasted like a sugar cookie in a cup. So this sweet and tasty dessert in a mug was invented. Bottoms up, buttercup!
Ingredients:
2 oz White Rum (if it overflows a little its ok!)
1/2 cup Butter softened
1 cup granulated Sugar
1 teaspoon Vanilla Bean Paste
1 cup White chocolate
A heavy dollop Whipped Cream
1 cup Hot Water
Start by melting the white chocolate in a microwavable dish. Start with a 45-second increment, stirring in-between to keep the chocolate from seeing up.
In a mixer with a paddle attachment, add the softened butter, sugar, and vanilla and mix until creamy.
Slowly add the melted white chocolate to the butter mixture.
Once it is all incorporated add the mix to a glass jar and store in the fridge for up to 3 week (as if it will even last that long)
In a tea kettle, heat water to a boil.
I rimmed my glass with a little honey and powder sugar to be fancy.
Add 2 tablespoons of the mix to a mug with 2 oz white rum.
Pour the hot water over the mix and stir until it is all melted.
Top with freshly whipped cream and enjoy. Now turn on love Actually and get to wrapping.
