Irish Soda Bread

I love making the ordinary feel special, but as a busy mama to three, I also need things that don’t take up too much time. Making Irish Soda bread with my kids for St. Patcricts day is a fun and easy tradition (with bread at the end!! I mean, who doesn’t like that). All jokes aside, this is a quick bread version of a yeasted bread that needs to proof for much longer. The texture on the inside is not going to be quite the same, but when I want bread with dinner in a pinch, this is the perfect treat.


Ingredients:

4 cups Flour

1 1/4 cup Buttermilk

3 tablespoons Sugar

1 tablespoon Sugar

1 teaspoon Baking Soda

1/2 teaspoon Salt

6 tablespoons melted Butter

1 Egg

Buttermilk Topping:

1/4 cup melted Butter

1/4 cup Buttermilk

Preheat oven to 425

In a large bowl, add the dry ingredients and whisk together until combined.

Pour mixture into a mixer fitter with a paddle attachment.

Slowly add the egg, melted butter, and buttermilk and mix on low until dough forms.

Lightly flour the countertop and place dough on the flour.

Lightly knead the bread until the dough comes together. Do not over kneed, or the bread will be tough.

Cut a X into the top of the dough with a knife.

Line a dutch oven with parchment paper.

Place bread in the oven for 15 minutes.

While the bread is baking, melt 1/4 cup butter.

Slowly add the butter to the buttermilk and whisk.

After the bread bakes for 15 minutes, remove from the oven and brush the buttermilk mixture over the top.

Place back in the oven and do this every 5-10 minutes until the bread is done. It should bake for 25-30 minutes in total.

Let cool and slice into it. It is a fun St. Paddy’s tradition, and it's really good all year-round served with soups or stews or even with jam for breakfast.
