Sweet Corn Salad
Nothing makes it feel like summer quite like fresh corn. I love the texture and sweetness the uncooked kernels bring to this salad. Not to mention I always feel like I’m in a “rom-con” when I come home from the farmers market with my cute (monogrammed) straw tote full of fresh corn and cherry tomatoes
Ingredients For Salad:
2 small heads Romaine lettuce
10-15 Cherry Toatoes cut into 1/2
3 ears Fresh Sweet Corn
1/4 cup chopped Cilantro
3 Green Onion
4 oz Cotija Cheese
1 Avocado
Ingredients For Dressing:
Juice from one lime
1/4 cup Oil (I used avocado oil)
1/4 cup Red wine vinegar
Salt and Pepper to taste
I like to prep the salads by cutting the lettuce first and placing it in a bowl as my base layer. I feel like this gives me a good idea of how much I need. Start by chopping the romaine and placing it in the bottom of a serving bowl.
Husk the corn and place the ear in the bowl upright. Cut the corn off the cob into the bowl.
Cut an avocado in 1/2 and remove the pit. Then score the avocado into cubes and scoop it out into the bowl.
Cut up a green onion and cherry tomato and place them into the bowl.
Crumble the cheese on top of the salad.
To make the dressing squeeze the juice from one lemon into a small bowl.
Add oil, salt, pepper, and vinegar to lime juice and whisk.
Drizzle the dressing over the salad and toss. This salad is great as a side, or if you add grilled chicken or shrimp, you have dinner. Look at you being healthy and eating your veg! Good for you, darling!
